  • Chicken tenderloins (600g / 1lb 5oz)
  • Beef sausages1, GF (6)

 

CHILLED / FROZEN

  • Lite sour cream (185ml / 6.3 fl.oz)
  • Tasty cheddar cheese (200g / 7oz)

GENERAL GROCERY

  • Sesame seeds (2 Tbsp)
  • Sunflower seeds (2 Tbsp)
  • Roasted, salted cashews (70g / 2.5oz)
  • Mini tortillas2, GF (flour or corn) (12)
  • Polenta (150g / 5.3oz)
  • Pearl barley3, GF (150g / 5.3oz)
  • Tomato paste (2 Tbsp)
  • Chilli beansGF (mild, medium or hot) (400g can / 14oz)

 

PANTRY STAPLES

  • Milk (250ml / 8.5 fl.oz)
  • Butter (1 1/2 Tbsp)
  • Cooking oil spray
  • Olive oil (95ml / 3.2 fl.oz)
  • Sesame oil (2 tsp)
  • Apple cider vinegar (85ml / 2.9 fl.oz)
  • Soy sauceGF (3 Tbsp)
  • Wholegrain mustard (1 tsp)
  • Peanut butter (3 Tbsp)
  • Sugar (4 tsp)
  • Chicken stock powderGF (3 1/2 tsp)
  • Dried thyme (1 tsp)
  • Dried oregano (1/2 tsp)
  • Ground cumin (1 1/2 tsp)
  • Paprika (1 1/4 tsp)
  • Salt and pepper

1 I used beef and merlot sausages. Use pork or lamb if you prefer.

2 If you can’t find a 12 pack of tortillas, use a 10 pack and reduce corn to 1 ear.

3 Pearl barley can be substituted for rice or quinoa.

GF Gluten-free swaps: Make sure sausages are gluten-free. Choose gluten-free flour or corn tortillas. Swap barley for rice or quinoa. Ensure chilli beans are gluten-free. Choose gluten-free soy sauce and stock powder.
