MEAT / FISH

  • White fish fillets, i.e. lemon fish1 (500g / 1lb 2oz)
  • Boneless, skinless chicken thighs (600g / 1lb 5oz)
  • Pork mince2 (600g / 1lb 5oz)

 

CHILLED / FROZEN

  • Unsweetened Greek yoghurt (250ml / 8.5 fl.oz)

PANTRY STAPLES

  • Egg (1)
  • Olive oil (3 Tbsp)
  • Rice bran oil (3 Tbsp)
  • Sesame oil (1 1/2 tsp)
  • MayonnaiseGF (3 Tbsp)
  • White vinegar (60ml / 2 fl.oz)
  • Rice wine vinegar (2 tsp)
  • Soy sauceGF (3 Tbsp)
  • Sugar (2 1/2 Tbsp)
  • Chicken stock powderGF (1 tsp)
  • Garlic powder (2 1/2 tsp)
  • Sumac (1 1/2 tsp) not essential
  • Salt and pepper

1 If you don’t like fish, use chicken tenderloins instead.

2 Beef or chicken mince would be fine too.

3 You could use fresh strawberries instead of cranberries.

4 Cornichons (baby gherkins) are a good alternative.

GF Gluten-free swaps: Swap rolls for gluten-free wraps. Use a 250g / 8.8oz microwave pouch brown rice and quinoa instead of couscous. See pork bao recipe notes for a homemade gluten-free hoisin sauce. Use gluten-free mayonnaise, soy sauce and stock powder.
