  • Beef sirloin or rump steak1 (500g / 1lb 2oz)
  • BaconGF (250g / 8.8oz)
  • Frozen raw prawn pieces or cutlets1 (400g / 14oz)

 

CHILLED / FROZEN

  • Lite sour cream (250ml / 8.5 fl.oz)
  • Basil pesto2, GF (5 Tbsp)
  • Cheddar or Colby cheese (175g / 6.2oz)
  • Fried tofu puffs3, GF (120g / 4.2oz) optional

GENERAL GROCERY

  • Eggs (6)
  • Laksa paste3, GF (175g / 6.2oz)
  • Fish sauceGF (2 tsp)
  • Crispy fried shallots3, GF (3 Tbsp) optional
  • Chicken stockGF (750ml / 25 fl.oz)
  • Rice noodles3, GF (250g / 8.8oz)
  • Microwave pouches brown rice (2 x 250g / 2 x 8.8oz)
  • Lite or regular coconut milk (400ml / 13.5 fl.oz)
  • Black beans (400g can / 14oz)
  • Canned crushed and sieved tomatoes (300g / 10.6oz)

 

PANTRY STAPLES

  • Milk (125ml / 4.2 fl.oz)
  • Olive oil (2 1/2 tsp)
  • Peanut oil (1 Tbsp)
  • AioliGF (2 Tbsp) optional
  • Brown sugar (1 Tbsp)
  • Chicken stock powderGF (1 tsp)
  • Ground cumin (1 1/2 tsp)
  • Dried oregano (1 tsp)
  • Garlic powder (1 tsp)
  • Smoked paprika (1 tsp)
  • Salt and pepper

1 Boneless, skinless chicken thighs are a good alternative for both.

2 The pesto can be omitted for a more child friendly meal.

3 I found all of these ingredients at my local Asian grocery store.

4 You can use large hash browns and break them up instead.

GF Gluten-free swaps: Choose gluten-free bacon and pesto. Make sure tofu puffs, tater tots, laksa paste, fish sauce and shallots are gluten-free. Use gluten-free stock, noodles, aioli and stock powder.
