  • Plain, unsweetened yoghurt (80ml / 2.7 fl.oz)
  • Pizza bases3, GF (2 large / approx. 300g / 10.6oz)
  • Chunky basil pesto dipGF (80g / 2.8oz)
  • Colby cheese (75g / 2.6oz)

PANTRY STAPLES

  • Milk (125ml / 4.2 fl.oz)
  • Egg (1)
  • Butter (3 Tbsp)
  • Olive oil (2 1/2 Tbsp)
  • Apple cider vinegar (1 1/2 Tbsp)
  • Tomato sauce (ketchup)GF (100ml / 3.4 fl.oz)
  • Worcestershire sauceGF (2 tsp)
  • American mustard (1 Tbsp)
  • Wholegrain mustard (1 tsp)
  • Honey (1 tsp)
  • Brown sugar (1 Tbsp)
  • Sugar (1/2 tsp)
  • Beef stock cubeGF (1)
  • Garlic powder (1 1/2 tsp)
  • Dried oregano (1 1/2 tsp)
  • Dried thyme (1 tsp)
  • Smoked paprika (1 tsp)

1 Use boneless, skinless chicken thighs or tenderloins if you prefer.

2 Alternatives: smoked chicken, prawns + chorizo, chicken tenderloins (increase weight to between 300-450g / 10-16oz).

3 I used Turkish Cauliflower Pizza Bases (current favourite!).

4 Most veggies (fresh or frozen) will work with meatloaf.

5 Cranberry jelly or jellied cranberry sauce are the best options.

GF Gluten-free swaps: Ensure salmon is gluten-free. Choose your favourite gluten-free pizza bases. Use gluten-free pesto dip, panko breadcrumbs, tomato sauce and Worcestershire sauce. Use a gluten-free stock cube (or 1 tsp gluten-free beef stock powder).
