1 Use boneless, skinless chicken thighs or tenderloins if you prefer.
2 Alternatives: smoked chicken, prawns + chorizo, chicken tenderloins (increase weight to between 300-450g / 10-16oz).
3 I used Turkish Cauliflower Pizza Bases (current favourite!).
4 Most veggies (fresh or frozen) will work with meatloaf.
5 Cranberry jelly or jellied cranberry sauce are the best options.
GF Gluten-free swaps: Ensure salmon is gluten-free. Choose your favourite gluten-free pizza bases. Use gluten-free pesto dip, panko breadcrumbs, tomato sauce and Worcestershire sauce. Use a gluten-free stock cube (or 1 tsp gluten-free beef stock powder).
