  • Hot dogs / frankfurters2, GF (6 / approx. 500g / 1lb 2oz)

  • Lite cream cheese (140g)
  • Cheddar cheese (70g / 2.5oz)
  • Parmesan cheese (90g / 3.2oz)

GENERAL GROCERY

  • Pinenuts (2 Tbsp)

  • Medium grain brown rice3 (300g / 10.6oz)
  • Chicken stockGF (1.5L / 51 fl.oz)
  • Vegetable stockGF (875ml / 30oz)
  • Sliced sundried tomatoes (50g / 1.8oz)
  • Canned whole corn kernels (400g /14oz)
  • Canned pineapple pieces in juice (225g / 7.9oz)
  • White wine (60ml / 2oz) optional

 

PANTRY STAPLES

  • Butter (3 1/2 Tbsp)
  • Olive oil (1 tsp)
  • MayonnaiseGF (6 Tbsp)
  • Fish sauceGF (2 tsp)
  • Soy sauceGF (1/2 Tbsp)
  • Dried thyme (1 1/2 tsp)
  • Turmeric (1 tsp)
  • Dried rosemary (1/2 tsp)
  • Salt and pepper

1 If unable to find this, replace with 1 lemon (only zest needed).

2 Chicken frankfurters or kransky sausages will also work. If you don’t want to use frankfurters, try 500g / 1lb 2oz chicken tenderloins.

3 You can use arborio rice instead.

GF Gluten-free swaps: Ensure hot dogs are gluten-free. Omit the garlic bread (not essential to the meal). Use gluten-free wraps instead of rolls and replace noodles with gluten-free rice noodles. Choose gluten-free stock, mayonnaise, fish sauce and soy sauce.
