FRESH PRODUCE

  • Baby kale (120g / 4.2oz)

  • Fresh basil (handful) optional

  • Green cabbage (1/4)
  • Red kumara (1lb 5oz)
  • Garlic (2 cloves)

 

MEAT / FISH

  • White fish fillets, i.e. snapper, tarakihi1 (400g / 14oz)
  • Butterflied chicken, ideally Mediterranean or garlic and herb flavouredGF (1.1kg / 2lb 5oz)
  • Lamb mince2 (500g / 1lb 2oz)

 

CHILLED / FROZEN

  • Plain, unsweetened yoghurt (155ml / 5.2 fl. oz)
  • Basil pestoGF (75g / 2.6oz)
  • Cheddar cheese (67g / 2.4oz) optional
  • Feta cheese (200g / 7oz)
  • Roti, plain or garlic3, GF (4)

GENERAL GROCERY

  • Brown rice flour4 (40g / 1.4oz)
  • Roasted almonds (40g / 1.4oz)
  • Pinenuts (2 Tbsp)
  • Wide lasagne pastaGF (200g / 7oz)
  • Cornichons / mini gherkins (6)
  • Sliced sundried tomatoes (50g / 1.8oz)
  • Tomato paste (1 Tbsp)
  • Canned pesto flavoured tomatoes5 (400g / 14oz)

 

PANTRY STAPLES

  • Milk (2 Tbsp)
  • Egg (1)
  • Butter (1 Tbsp)
  • Olive oil (3 Tbsp)
  • Balsamic vinegar (1/2 Tbsp)
  • AioliGF (90ml / 3 fl.oz)
  • Wholegrain mustard (1 tsp)
  • Brown sugar (1/2 Tbsp)
  • Lamb or beef stock cubeGF (1)
  • Dried oregano (1 tsp)
  • Paprika (1 1/2 tsp)
  • Salt and pepper

1 If you don’t like fish, use boneless chicken thighs or tenderloins.

2 Use beef mince if you can’t find lamb mince.

3 I used Turkish Bread butter-flavoured roti. Wraps or tortillas are a good alternative.

4 Can be substituted with plain flour.

5 If you can’t find pesto flavoured, use Italian flavoured instead.

GF Gluten-free swaps: Choose a gluten-free butterflied chicken. Ensure pesto is gluten-free. Swap roti for gluten-free wraps or tortillas. Replace wide lasagne with your favourite gluten-free pasta. Choose gluten-free aioli and stock cubes.
