  • Plain, unsweetened yoghurt (125ml / 4.2 fl.oz)
  • Feta cheese (75g / 2.6oz)
  • Cheddar cheese (150g / 5.3oz)
  • Naan breads3, GF (2-3 pieces / 300g)

GENERAL GROCERY

  • Kumara crispsGF (100g / 3.5oz)
  • Roasted, salted peanutsGF (50g / 1.8oz) 
  • Macadamia nuts (or replace with slivered almonds) (50g / 1.8oz)
  • Slivered almonds (2 Tbsp)
  • Peanut butter (smooth or crunchy) (145g / 5.1oz)
  • Mango chutney GF (1/4 cup)
  • Chickpeas in spring water (400g can / 14oz)
  • Lite coconut milk (375ml / 12.7 fl.oz)
  • Tandoori pasteGF (3 Tbsp)
  • Yellow curry paste4, GF (2 1/2 Tbsp)
  • Microwave pouches brown or white rice (2 x 250g / 2 x 8.8oz)
  • 10-12 medium-sized metal or wooden skewers

 

PANTRY STAPLES

  • Olive oil (3 Tbsp)
  • Peanut oil (4 tsp)
  • Balsamic vinegar (2 Tbsp)
  • Apple cider vinegar (2 tsp)
  • Soy sauceGF (2 1/2 Tbsp)
  • Dijon mustard (1 tsp)
  • Brown sugar (3 Tbsp)
  • Salt and pepper

1 Chicken tenderloins work well too.

2 Use sirloin steak or eye fillet if you prefer, or lamb leg steaks.

3 I used Silk Road Fresh Garlic Tandoori Naan.

4 If you like a bit more heat, use red curry paste instead.

GF Gluten-free swaps: Choose gluten-free pizza bases instead of naan bread. Ensure kumara crisps, peanuts and chutney are gluten-free. Use gluten-free tandoori paste, curry paste and soy sauce.
