FRESH PRODUCE

  • Baby spinach (180g)
  • Basil leaves (1 plant)
  • Corn cobs¹ (2)
  • Cherry tomatoes (125g)
  • Avocados² (2)
  • Lemon (1)
  • Lime (1)
  • Spring onions (1 bunch)
  • Green cabbage (1 small half)
  • Carrot (1 large)
  • Green beans (400g)
  • Ginger (small piece)
  • Garlic (3 cloves)
  • Red onion (1 small)
  • Brown onion (1)
  • Kumara (sweet potato) (3 large)

MEAT / FISH

  • Boneless, skinless chicken thighs (600g)
  • Pork schnitzel (500g)
  • Streaky bacon (250g)

CHILLED / FROZEN

  • Plain unsweetened yoghurt (1 cup; 250mL)
  • Sour cream (2 Tbsp; 30ml)
  • Ricotta cheese (200g)
  • Parmesan cheese (30g)
  • Frozen peas (75g; 1/2 cup)

GENERAL GROCERY

  • Eggs (4)
  • Panko breadcrumbs (1 cup)
  • Brown basmati rice (2 x 250g microwave pouches)

 

PANTRY STAPLES

  • Milk (1 cup; 250ml)
  • Butter (2 tsp)
  • Olive oil (2 Tbsp)
  • Vegetable oil (1/4 cup)
  • Plain flour (225g; 1 1/2 cups)
  • Baking powder (1 tsp)
  • Sugar (1 tsp)
  • Aioli (1 Tbsp)
  • Dijon mustard (1 Tbsp)
  • Cornflour (2 Tbsp)
  • Chicken stock powder (2 tsp)
  • Curry powder (2 1/2 tsp)
  • Garam masala (1 1/2 tsp)
  • Ground cumin (1/2 tsp)
  • Turmeric (1/2 tsp)
  • Paprika (1 tsp)
  • Dried oregano (1/2 tsp)
  • Onion salt (1/2 tsp)
  • Salt and pepper

¹ If you can’t get fresh corn, canned whole corn kernels are a good alternative. You will need a 400g can.

² Avocados are my top choice for this week’s menu; however, if you can’t find any at a reasonable price, try frozen peas or edamame beans as an alternative in these recipes.
