ROAST PORK BELLY  |  CURRIED CHICKPEAS ON ROTI  |  MEDITERRANEAN NOODLES

FRESH PRODUCE

  • Baby spinach (80g / 2.8oz)
  • Coriander or parsley (large handful) optional
  • Red chilli (1) optional
  • Lemon (1 large)
  • Green apples, i.e. Granny Smiths (2)
  • Tomatoes (4 large)
  • Lebanese cucumber (1)

  • Green beans (250g / 8.8oz)
  • Orange kumara (500g / 1lb 5oz)

MEAT / FISH

  • Boneless pork belly (650g / 1lb 7oz)
  • Chicken frankfurters1, GF (400g / 14oz)

 

CHILLED / FROZEN

  • Plain, unsweetened yoghurt (125ml / 4.2 fl.oz)
  • Lite cream cheese (125ml / 4.2 fl.oz)
  • Feta cheese (200g / 7oz)

GENERAL GROCERY

  • Pre-cooked Singapore noodles2, GF (350g / 12.3oz)
  • Chickpeas ( 2 x 400g cans / 2 x 14oz)
  • Roti3, GF (4 large)

 

PANTRY STAPLES

  • Butter (4 Tbsp)
  • Olive oil (2 Tbsp)
  • MayonnaiseGF (1 Tbsp)
  • Caster sugar (5 tsp)
  • Sugar (1/2 tsp)
  • Chicken stock powderGF (2 tsp)
  • Garam masala (1 Tbsp)
  • Cumin seeds (1 1/2 tsp)
  • Dried oregano (1 tsp)
  • Yellow mustard seeds (1 tsp)
  • Ground cinnamon (1/8 tsp)
  • Salt and pepper

1 I used Turk’s smoked chicken frankfurters. If you can’t find chicken frankfurters, regular frankfurters or diced chicken thighs will be fine.

2 You can use spaghetti as an alternative to Singapore noodles.

3 Usually available in both the chilled and bread sections. Use wraps as an alternative.

GF Gluten-free swaps: Ensure frankfurters are gluten-free. Use gluten-free spaghetti instead of noodles and gluten-free wraps instead of roti. Choose gluten-free mayo and stock powder.
