1 A pink skinned beetroot with stripy pink and white flesh. Regular or yellow beetroot, radishes and red onion are all good alternatives.
2 Spinach works well too.
3 You can use any white fish. I used Mahi Mahi. Tuna is also good.
4 Bacon, pancetta or kransky sausages are great options too.
GF Gluten-free swaps: Ensure chorizo is gluten free. Choose your favourite gluten-free bread as a replacement for ciabatta. Use gluten-free fettuccine. Make sure mayonnaise is gluten-free and use gluten-free flour, cornflour and stock cube.
