  • Lime juice (1 1/2 Tbsp)

  • Microwave pouches brown rice (2 x 250g / 2 x 8.8oz)

  • Oyster sauceGF (2 1/2 Tbsp)
  • MirinGF (1 1/2 Tbsp)
  • Chickpeas in spring water (400g can / 14oz)
  • Whole corn kernels (400g can / 14oz)

 

PANTRY STAPLES

  • Eggs (4)
  • Butter (2 Tbsp)
  • Olive oil (3 Tbsp)
  • Rice bran oil (2-3 Tbsp)
  • Peanut oil (4 tsp)
  • Soy sauceGF (3 1/2 Tbsp)
  • Honey (4 Tbsp)
  • Plain flourGF (38g / 1.3oz)
  • Baking powderGF (1 tsp)
  • Cumin seeds (1/2 Tbsp)
  • Curry powder (1 1/2 tsp)
  • Garlic powder (1/2 tsp)
  • Dried rosemary (1 tsp)
  • Dried thyme (1 tsp)
  • Ground cumin (1 tsp)
  • Turmeric (1/4 tsp)
  • Salt and pepper

1 You could use bone-in chicken (i.e. drumsticks) instead but increase quantity to 1kg / 2lb 3oz. Chicken breasts also work.

2 Plain flour can be used instead if you have no other use for rice flour.

GF Gluten-free swaps: Use gluten-free pastry or swap for mashed potato. Use gluten-free chutney, stock and oyster sauce. Make sure mirin is gluten-free. Use gluten-free soy sauce, gluten-free plain flour and gluten-free baking powder.
