Yum, yum, yum! I really enjoyed creating (and eating!) the meals for this week's menu. Crunchy top chicken with crumpet bread and salad is full of delicious textures and flavours. The vegetarian spaghetti bolognese has haloumi added for extra yum factor, and the stuffed baked potatoes are crammed with chorizo, corn, sautéed red cabbage and cheese.
Find three quick and easy meals this week. Garlic prawns is a simple recipe that really lets the delicious flavours shine through. Country-style pizzas are my favourite type of pizza - bacon, potato, caramelised onions and dollops of sour cream...yum! With freshly squeezed orange juice, ginger, honey and turmeric, orange chicken is a nourishing winter meal.

Golden stir fry tofu is a super quick and tasty vegetarian meal that you can have on the table in under half an hour. The Greek-style nachos are one of my favourite dinners - they're a cross between nachos and a salad, and really delicious!
Mediterranean fish parcels are one of my favourite ways to enjoy fish. With tomatoes, feta, fresh herbs, olive oil, garlic and lemon, they're full of natural goodness and flavour. Potato frittata with bacon and cheese is a substantial meal that's perfect for any time of day, while the chicken, camembert and cranberry filo pies are quick, easy and delicious.
This week's menu features a lemony chicken pasta in a delicious (and virtually guilt-free) creamy sauce. Then there's the epic beef burger stacks - beef, cheese, bacon, salad and aioli sandwiched between kumara rounds… yum! Creamy tomato soup with pea and feta bruschetta is a super tasty meal too, and perfect on a cold winter's night.
My favourite meal this week is the pork and potato rosti stacks. They're pretty easy to make, a little indulgent and oh so delicious! We're also cooking fish tacos with edamame 'guacamole' (a great alternative when avocados are out of season) and a classic, warming meal of apricot chicken. Enjoy!
Get ready to try twists on classic recipes this week. Creamy risotto with chicken, pumpkin and leek is much heartier than soup but just as good at warming you up. Falafel kebabs are a delicious vegetarian meal (or not so vegetarian, if you add the bacon!). Complete the week with lamb meatballs served on pesto spaghetti with delicious whipped feta.
We're all about easy, quick meals this week! Start the week off with a Japanese-inspired meal of miso chicken with crunchy apple slaw. Crispy skin salmon with rice salad is just a touch gourmet but so simple and fast to prepare. The final recipe - sausage stir fry - is a delicious family meal with an easy sauce that can be used as a base for other stir fries.
