It's the silly season and life is HECTIC! This week's menu is a compilation of three quick, easy and delicious meals from the existing Y.U.M recipe collection. First up - steak and pesto spaghetti. It has minimal ingredients, minimal prep time and maximum flavour! Miso chicken stir fry is next on the menu. It's another quick and easy meal. Round out the week with corn and prawn fritters. These are super yummy and have rave reviews! Make sure you check out the menu notes for suggested ingredient swaps.
RECOMMENDED ORDER OF MEALS (for best variety):

You might notice the shopping list has a few extra notes this week! Because these recipes weren't originally in the same menu, I've added a few extra comments to optimise your shopping.

Refer to these notes when cooking the corn and prawn fritters:
Parmesan can be swapped for 50g / 1.8oz feta. The chives and red onion can be replaced with 3 spring onions - 1 in the salad and 2 in the fritters. You can use rice bran oil instead of vegetable oil. Yoghurt / sour cream - can use one or the other.
