What’s cooking?! First on this week’s menu is Mexican fried rice. It’s a fast, simple meal that’s full of flavour and light on dishes. Salisbury steak is up next. Generously sized beef patties are simmered in a flavoursome mushroom gravy and served on low carb cauliflower mash. Finish up the week with a Mediterranean crustless quiche. This easier, healthier alternative to regular quiche tastes a bit like soufflé and makes the perfect summery meal.

This cheesy mince pasta bake is a delicious way to use up any extra feta and sundried tomatoes.
