This week's menu features multiple different cuisines, including two in the same meal. Start the week off with a Meatless Monday dinner of cheesy pumpkin quesadillas with pickled red onion, sour cream and lime. Teriyaki chicken on quick fried rice is a mash up of Japanese and Chinese - not at all authentic but so easy and tasty. The final meal - bacon and egg pie - has a few adaptations on the classic and is well worth a try.

OTHER NOTES: If you struggle to find the exact weights of baby spinach and silverbeet (or regular spinach), you can replace some of one with the other (except in the salad to go with the pie).
