Start the week off with a quick and easy Japanese-inspired miso chicken stir fry. The next meal on this week’s menu is sausage, brie and caramelised leek frittata. It’s just a little gourmet and very filling. Tofu fritters are a delicious vegetarian dinner to end the week. With a hint of curry flavour, they’re served with quick pickled cucumber, cashews and a sweet chilli yoghurt sauce.

OTHER NOTES:
If you have some leftover baby spinach to use up, try this easy chicken and kumara bake. Not sure what mirin is? It's a Japanese sweet rice wine.
