Beef, macadamia and kumara crisp salads are an exceptionally quick and easy meal to start off the week. Delicious paired with the sweet yet tangy balsamic dressing. The next meal is one of my favourites - satay chicken skewers. This homemade version of the popular Thai entrée is turned into a full meal with rice and greens. Lastly, enjoy a moreish vegetarian dinner of tandoori chickpea pizzas, using fluffy naan bread for the base. Yum!

OTHER NOTES: Save your leftover yellow curry paste - I'll be releasing a recipe to use this up in a couple of weeks! Got some extra feta that you don't know what to do with? Try this delicious appetiser: place feta in an oven-safe dish, drizzle with olive oil and bake at 200ºC (400ºF) for 10 minutes. Then add a little honey, cracked pepper, sliced almonds and fresh thyme (optional) and cook for a further 5-10 minutes. Serve with fresh bread, pita crisps or vegetable sticks and a glass of chilled white wine.
