Brighten up Monday with delicious Vietnamese chicken banh mi rolls. Juicy chicken, pickled vegetables, paté and sweet chilli aioli provide a great mix of flavours. Rice pilaf with lamb sausages is a simple family meal with subtle flavours. Toasted nuts and seeds add a nice crunch and dried fruit provides a hint of sweetness. Last on the menu this week are salmon and mango salads - mango and crispy noodles are such yummy additions!

OTHER NOTES: This week's menu has quite a few shared salad ingredients (lettuce, cucumber, capsicum and red onion), which I hope won't be too confusing. I've gone with lots of salad this week - making the most of it before the temperatures drop! Chicken banh mi are first on the menu so that you can enjoy the bread rolls at their freshest. I recommend freezing the salmon to use in the salmon and mango salads later in the week.
