This week’s menu features a couple of ethnic-inspired recipes! First on the list is Asian-style fish with noodle salad. This is a refreshing meal that’s nutritious, delicious AND ready in under 30 minutes. Spiced lamb with sundried tomato hummus is a version of Hummus B’lahmeh, a Middle Eastern dish. I’ve added a few extra veggies to make it weeknight worthy! Finish the week off with a simple ham and cheese rice slice. If you still have leftover Christmas ham, then this is a great way to help use it up!

OTHER NOTES: If you have some radishes left over, try roasting them for another meal. Just cut the ends off, cut in half, drizzle with olive oil and sprinkle with salt and pepper, then roast at 210ºC (410ºF) fan bake for approximately 15 minutes. Any leftover snowpea shoots can be added to the zucchini and corn salad in the ham and cheese rice slice recipe.
