Happy 2019! This week’s menu features fresh, light and summery recipes. First up is a chicken and nectarine summer salad. The combination of flavours is unusual but works really well. Best of all, it’s quick, very easy and you don’t need to turn the oven on. Chargrilled steak with kumara cakes and corn on the cob is second on the list. This one can be cooked outside on the barbecue - perfect for balmy summer evenings. Finish off the week with zucchini, pea and feta fritters. They’re just as good for lunch as they are for dinner, and even better with the addition of bacon or smoked salmon!
