Who loves chicken parmigiana? This yummy meal is served with kumara rounds and lots of salad, so you won’t feel too weighed down. My Y.U.M version of nasi goreng isn’t the most authentic but it’s an easy, fast and tasty weeknight meal that’s suitable for the whole family. Finish up the week with prawn cocktail salads - a fresh, light and summery meal that’s perfect for the warmer months. Ready in just 15 minutes too - exactly what we need in the frenzied countdown to Christmas!

OTHER NOTES:
As the prawn cocktail salads get eaten later in the week, I recommend either purchasing the bread on the day you plan to eat this meal or freeze the bread and warm up in the oven.
