Kick your Monday off with a restaurant quality meal of pan-fried fish on creamy risotto. Baking the risotto in the oven works surprisingly well and makes for a very easy dinner. Bacon cheeseburger salads are next on the menu. They’re a great lower carb version of regular cheeseburgers and have all the same flavours. The last of this week’s recipes is chicken enchiladas. With homemade enchilada sauce, they’re an easy family-friendly meal that’s sure to go down a treat.
