This week's meals are all on the lighter side, celebrating the arrival of spring! Vegetarian nachos with homemade tortilla chips are easy, healthy and super yummy - just the thing for Meatless Monday. For a family-friendly, filling meal, give the chicken noodle fritters a go - they're a great twist on corn fritters. Finish off the week with Chinese fried rice, a quick and easy one-bowl dinner that tastes very similar to the takeaway version.
MENU TIPS
RECOMMENDED ORDER OF MEALS (for best variety and use of fresh ingredients):
Vegetarian Nachos • Chicken Noodle Fritters • Chinese Fried Rice.

BEST OVERALL WINE MATCH (if you only want to buy one bottle for the 3 meals!):
A white wine is best for all three meals - choose your favourite.

OTHER NOTES:
The Chinese fried rice won't use up a whole bunch of spring onions - any extras can be sliced and added on top of both the nachos and the fritters. Any extra coriander goes well with the fritters too.
