For a really yummy, lower carb dinner, chicken caesar burger bowls are hard to beat. They're a jazzed up version of caesar salad, with a few extra veggies for more nutrition and flavour. The second meal - seafood chowder in homemade bread bowls - is moreishly good. The addition of miso paste really helps to balance the flavours. Finish the week off with spinach and feta stuffed lamb with a delicious minty dressing.
MENU TIPS
RECOMMENDED ORDER OF MEALS (for best variety):
Chicken Caesar Burger Bowls • Seafood Chowder • Spinach and Feta Stuffed Lamb.

BEST OVERALL WINE MATCH (if you only want to buy one bottle for the 3 meals!):
An un-oaked Chardonnay would be the best option.

OTHER NOTES:
There are three perishable ingredients that you might find you have leftovers of - bacon, chicken stock and spring onions. The bacon can be frozen for later or diced and added to the seafood chowder (add it at the same time as the vegetables). Liquid chicken stock also freezes well. You can add any remaining spring onions to the lamb salads.
