Golden, crunchy stuffed beef schnitzel oozing with ham and cheese is a scrumptious way to kick off the week. Follow it up with a warm winter salad - roasted mushrooms, haloumi and pearl couscous drizzled with basil pesto make for a moreish vegetarian combo. The easy chicken and leek pie is a deconstructed version for quicker cooking, with kumara rounds for the base and a cheesy pastry topper.

BEST OVERALL WINE MATCH (if you only want to buy one bottle for the 3 meals!):
Choose your favourite white wine.

OTHER NOTES:
If you have some leftover bread from the schnitzel that you wouldn't otherwise eat, you can make it into breadcrumbs and freeze for later use.
Brush any remaining pesto over some of the puff pastry, top with a little grated cheese and bake for 20 minutes. This makes a delicious lunch served with a bowl of soup, or as a side for a main meal. Alternatively, give these yummy lamb meatballs a go.
