Mediterranean fish parcels are one of my favourite ways to enjoy fish. With tomatoes, feta, fresh herbs, olive oil, garlic and lemon, they're full of natural goodness and flavour. Potato frittata with bacon and cheese is a substantial meal that's perfect for any time of the day, while the chicken, camembert and cranberry filo pies are simple and delicious - much easier to make than regular pies.

You may find you have some tomatoes, feta, fresh herbs and sundried tomato pesto left over - the perfect combination of ingredients for a vegetarian pasta meal!
