My favourite meal this week is the pork and potato rosti stacks. They're pretty easy to make, a little indulgent and oh so delicious! We're also cooking fish tacos with edamame 'guacamole' (a great alternative when avocados are out of season) and a classic, warming meal of apricot chicken. Enjoy!

BEST OVERALL WINE MATCH (if you only want to buy one bottle for the 3 meals!): A Chardonnay would be a good option.
OTHER NOTES: You are likely to have half a capsicum and perhaps some corn (if the small 300g can isn't available in your local supermarket) leftover from the fish tacos. You can use these up in the apricot chicken - dice the capsicum and cook with the chicken, and stir the corn into the couscous.
