Muffin tin dinners… that’s the theme for this week’s menu! Savoury meals, at least partly baked in muffin tins, but bearing very little resemblance to actual muffins! Moreish tuna bread cups are first up. A Mediterranean-style chickpea salad is the perfect accompaniment. Next on the menu is Asian pork meatloaf - mini versions baked in Texas muffin pans, served on a refreshing vermicelli noodle salad. End the week with mini potato gratins - so so tasty! Juicy steak and a caramelised onion salad complete this meal.

OTHER NOTES: Leftover garlic butter and cream cheese? Make another batch of the gratins and take them to a barbecue. Guaranteed to impress, and super easy to reheat (oven or microwave)! They also freeze well if you want to save some for later.
