This week's menu starts off with a meatless Monday meal of satay kumara salad. This vegan salad tastes like something you would get at a café. Delicious warm or cold. Next up is a pearl couscous risotto with creamy mushrooms, juicy steak and green veggies. Much easier than regular risotto! Finish the week with a smoked chicken quiche. You can't go wrong with the combination of chicken, brie and cranberry (+ pastry and pine nuts) - so good!
