A super quick and easy weeknight meal! These lamb pitas are infused with Mediterranean and Middle Eastern flavours.
This is a dinner you can whip up in less time than it would take for a takeaway to be delivered. The dishes are pretty minimal too!
The ingredients are easily customised to suit your tastes. It’s a pretty filling meal as is, but you could add some extra salad on the side or perhaps some potato koftas Fatimas-style (i.e. mini hash browns!).
I used wholemeal pita breads in the photo, but I think the regular version (be it pitas, Lebanese breads or flatbreads) is definitely yummier! You can make your own easy flatbreads using the method in this recipe if you prefer.

COOK SAUSAGES
Preheat oven to 190ºC (375ºF) fan bake. Place sausages on a rack set over an oven tray and cook for 20 minutes, rotating halfway through, until golden brown and cooked through.
PREPARE OTHER INGREDIENTS
Whisk together yoghurt and cumin and season to taste with salt and pepper. Thinly slice onion and slice feta.
Toast breads or wrap in foil and bake in oven for 5-10 minutes to warm through. Slice each cooked sausage into a few pieces.
ASSEMBLE AND SERVE
Spread the inside of each bread with hummus and yoghurt. Fill with sliced sausages, red onion, feta, sundried tomatoes and spinach. Serve immediately.
WINE MATCH: Try a Pinot Noir.
GLUTEN-FREE OPTION: Choose gluten-free sausages. Use gluten-free pitas or flatbreads and make sure hummus is gluten-free.

STORING AND REHEATING: These pitas are best assembled just before serving. Store sausages separate from other ingredients and reheat in the microwave. Any leftover assembled pitas could be toasted in a toasted sandwich maker.
