Yum, yum, yum! I really enjoyed creating (and eating!) the meals for this week's menu. Crunchy top chicken with crumpet bread and salad is full of delicious textures and flavours. The vegetarian spaghetti bolognese has haloumi added for extra yum factor, and the stuffed baked potatoes are crammed with chorizo, corn, sautéed red cabbage and cheese.
Stuffed baked potatoes take a little while to prepare but the wait is definitely worth it! Microwaving the potatoes first helps to speed up the cooking time. I’m not a huge fan of regular baked potatoes, but stuffed baked potatoes I can definitely get on board with! Crammed with chorizo, corn, sautéed red cabbage and cheese, with a big dollop […]
This vegetarian spaghetti bolognese is a great alternative when you don’t want to use meat. The haloumi adds a nice twist and really ups the yum factor! Are you vegetarian, or trying to reduce your meat intake? I’m not sure I could forego meat completely but I’m enjoying the challenge of developing some nutritious and interesting vegetarian meals (they seem […]
Chicken baked in a creamy tomato sauce with a crunchy, cheesy topping. This crunchy top chicken is too good! The crumpet breads are an adaptation of Simon Gault’s recipe and are easy and delicious. Don’t be put off by the long list of ingredients. The individual components are actually pretty easy and mopping up the sauces with warm, homemade bread […]
Find three quick and easy meals this week. Garlic prawns is a simple recipe that really lets the delicious flavours shine through. Country-style pizzas are my favourite type of pizza - bacon, potato, caramelised onions and dollops of sour cream...yum! With freshly squeezed orange juice, ginger, honey and turmeric, orange chicken is a nourishing winter meal.
This saucy orange chicken is super easy to make and full of flavour. With vitamin C from oranges, plus ginger, honey and turmeric, it’s a nourishing winter meal. I promise it’s a lot more saucy than it looks in the photo – all the sauce sunk to the bottom! This saucy orange chicken is super easy to make […]
Who doesn’t love a pizza? With bacon, potato, caramelised onions and dollops of sour cream, these country-style pizzas are a good hearty meal! This recipe was inspired by a pizza from a cozy little Italian restaurant in Browns Bay, called Sp’getti. It was one of my favourite restaurants as a kid and, more often than not, I would order their BBQ […]
Garlic prawns on garlic butter rice is a simple recipe that really lets the delicious flavours (garlic, butter, parmesan…) shine through. Even better, these garlic prawns can be on the table in under half an hour. I find this meal super easy for a busy weeknight when we’re low on ingredients. I usually have rice in the pantry and prawns in […]
