I’m a sucker for anything peanut-buttery and these satay tofu noodles are no exception. I had the meal tested by two meat-loving males and (surprisingly) both gave it a thumbs up!

This mildly spiced chicken korma curry is rich and satisfying. With no cream and a few extra veggies thrown in, it’s a little healthier than usual but still really delicious!

Creamy leek and potato soup with homemade cheese and garlic quick bread - this is truly scrumptious! Soup might not seem like much for dinner but this is a deceptively filling meal.
LEEK AND POTATO SOUP
This creamy tuna mornay pasta bake is really just a jazzed up macaroni cheese - it’s the perfect comfort food. If you don’t like tuna you could switch this out for cooked bacon, chicken or sliced sausages.
TUNA MORNAY PASTA BAKE
These lemon garlic chicken drumsticks are an inexpensive and easy dinner. 
The warm kumara, kale and feta salad is a nice alternative to regular salads on cooler nights.
LEMON GARLIC CHICKEN
Toad in the hole is the perfect winter warming meal. Step it up a notch with caramelised onion gravy and steamed veggies topped with feta and pinenuts.
TOAD IN THE HOLE
Stuffed baked potatoes take a little while to prepare but the wait is definitely worth it! 
Microwaving the potatoes first helps to speed up the cooking time.
STUFFED BAKED POTATOES
This vegetarian spaghetti bolognese is a great alternative when you don’t want to use meat. The haloumi adds a nice twist and really ups the yum factor!
