This lamb and orzo salad is a great summery meal. It’s full of fresh herbs and lots of interesting textures. Delicious eaten warm or cold, and perfect for taking on a picnic!

Rich, savoury mince covered with a cheesy spinach layer and finished with crisp, golden filo pastry sheets. If you haven’t tried beef florentine filo pie before, you’re missing out!

Crunchy crumbed chicken tenders served on a salad packed with tasty ingredients. This is a really yummy meal that still has decent nutritional value.
CRUMBED CHICKEN TENDERS
I’m a sucker for anything peanut-buttery and these satay tofu noodles are no exception. I had the meal tested by two meat-loving males and (surprisingly) both gave it a thumbs up!
SATAY TOFU NOODLES
I love a good savoury tart (or quiche). Buttery pastry and a rich savoury filling are balanced out with a fresh green salad. Using canned salmon, this savoury salmon tart is a delicious, inexpensive meal.

You can adjust the amount of curry powder to suit your tastes.

Beef and broccoli stir fry is a popular Chinese dish. With its rich yet mild sauce it’s a great family-friendly meal. As per usual, I’ve snuck in a few extra veggies!
BEEF & BROCCOLI STIR FRY
You won’t notice the lack of meat with these delicious vegetarian stuffed pasta shells. Fecotta makes a yummy alternative to ricotta, if you can find it in your local supermarket.
STUFFED PASTA SHELLS
This spinach and feta stuffed lamb is a lighter version of roast lamb, with lots of greens and not as many carbs. The minty dressing finishes the meal off nicely.
SPINACH & FETA STUFFED LAMB
I love a good seafood chowder! Serving it in bread bowls makes for a much more exciting meal, and the addition of miso paste really helps to balance out the flavours.

These chicken caesar burger bowls are a jazzed up version of caesar salad. I’ve thrown in a few extra veggies for more nutrition and flavour. This is a really yummy, lower carb dinner.

Golden, crunchy stuffed beef schnitzel oozing with ham and cheese…mmm. Cauliflower cheese mash is the perfect pairing.

These flavoursome salmon cakes use chickpeas instead of mashed potato, making patties that are 
much quicker to put together and hold their shape nicely.

Crispy, oven-baked fries loaded with alllll the toppings. Yum yum! These loaded Mexican fries are a great alternative to nachos.

This mildly spiced chicken korma curry is rich and satisfying. With no cream and a few extra veggies thrown in, it’s a little healthier than usual but still really delicious!
CHICKEN KORMA CURRY
Creamy leek and potato soup with homemade cheese and garlic quick bread - this is truly scrumptious! Soup might not seem like much for dinner but this is a deceptively filling meal.
LEEK AND POTATO SOUP
This creamy tuna mornay pasta bake is really just a jazzed up macaroni cheese - it’s the perfect comfort food. If you don’t like tuna you could switch this out for cooked bacon, chicken or sliced sausages.
TUNA MORNAY PASTA BAKE
These lemon garlic chicken drumsticks are an inexpensive and easy dinner. 
The warm kumara, kale and feta salad is a nice alternative to regular salads on cooler nights.
LEMON GARLIC CHICKEN
Toad in the hole is the perfect winter warming meal. Step it up a notch with caramelised onion gravy and steamed veggies topped with feta and pinenuts.
TOAD IN THE HOLE
Stuffed baked potatoes take a little while to prepare but the wait is definitely worth it! 
Microwaving the potatoes first helps to speed up the cooking time.
STUFFED BAKED POTATOES
This vegetarian spaghetti bolognese is a great alternative when you don’t want to use meat. The haloumi adds a nice twist and really ups the yum factor!
VEGETARIAN SPAGHETTI BOLOGNESE
Chicken baked in a creamy tomato sauce with a crunchy, cheesy topping. This crunchy top chicken is too good! 
The crumpet breads are an adaptation of Simon Gault’s recipe and are easy and delicious.
CRUNCHY TOP CHICKEN
This saucy orange chicken is super easy to make and full of flavour. With vitamin C from oranges, plus ginger, honey and turmeric, it’s a nourishing winter meal.

Who doesn’t love a pizza? With bacon, potato, caramelised onions and dollops of sour cream,
