This week’s menu features a couple of ethnic-inspired recipes with lots of fresh veggies! First on the list is Asian-style fish with noodle salad - nutritious, delicious AND ready in under 30 minutes. Spiced lamb with sundried tomato hummus is a version of Hummus B’lahmeh, a Middle Eastern dish. I’ve added a few extra veggies to make it weeknight worthy! Finish the week off with a simple ham and cheese rice slice. If you still have leftover Christmas ham, then this is a great way to help use it up!
